The leanest, most tender cut on the animal. Fillet comes from the muscle that does the least work, which is exactly why it's so prized: fine-grained, meltingly soft, and with a delicate flavour that doesn't need much doing to it. We hand-cut ours in the Richmond shop from beef supplied by the farms we work with.
