A classic for a reason. Sirloin sits along the back of the animal and offers a great balance between tenderness and flavour — not as lean as fillet, but with just enough fat and marbling to keep it juicy and give it real depth of taste. We hand-cut ours in the Richmond shop from beef supplied by our farm.
Versatile enough for a Sunday roast on the bone, or cut into steaks for a quick, no-fuss dinner that still feels special. It takes well to a hot pan or a hot oven, and rewards a good rest before serving.
